Mushroom Madness
On a recent visit to Montreal's Jean Talon market I discovered what is known as the "Puffball" mushroom. These giants can grow up to 30cm in diameter! I can't imagine foraging for these is too difficult. Anyway I bought a 1' slab (from the mushroom pictured above) cubed it, sauteed it in butter with a little salt and pepper, and my mind exploded. I should have bought the whole damn thing. The texture was reminiscent of fresh mozzarella, but still had this nutty earthiness to it. Wild. I would put this mushroom on everything if I could, 1) afford it, and 2) more easily find them! I can imagine they would be delightful in egg dishes, salads....perhaps breaded and fried, mmmmm. Please let me know if you have recipes or puffball stories of your own, I'm hooked!
